Mini Xmas Puddings

This Christmas why not use your Freezer Pod to make your own little Christmas puddings? Take them along to a party to share with with family and friends.

You would be forgiven for thinking Freezer Pods were actually designed for this purpose!

 

They are really easy and you can create a real party piece that others will love to look at and then devour!
If you have any older children, this is a fun Christmas activity to do with them.  They will then enjoy eating them even more!

 

Ingredients:

  • 2½ oz (60 g) self-raising flour

  • ½ tsp baking powder

  • ½ tsp ground mixed spice

  • 1 medium egg

  • 1 oz (25 g) butter, softened

  • 1½ fl oz (40 ml) black treacle

  • 1½ oz (40 g) Bramley cooking apple, peeled, cored and finely diced

  • ½ oz (10 g) hazelnut meal

  • 3 oz (75 g) currants

  • 200g mincemeat

  • grated zest ½ lemon

Decorate:

  • 5 Glacier Cherries

  • Ready to roll icing

  • Holly leaf cake decorations

Method:

1. Preheat the oven to 180°C and grease the Freezer Pods lightly with a drop of vegetable oil.
2. First sift the flour, baking powder and mixed spice into a medium bowl.
3. Then add the egg, softened butter and treacle.
4. Next, using an electric hand whisk, whisk everything very thoroughly together.
5. Now add the apple, hazelnut meal, currants, mincemeat and finally the grated lemon zests.
6. You are now ready to mix everything together really well and divide the mixture among your pre greased Freezer Pods, leaving approx. 1 cm at the top to allow for rising.
7. Place the Freezer Pods in the oven. Leave to cook for approximately 25 minutes, or until the puddings are springy and firm to the touch in the center.
8. Then remove them from the oven and let them stand for 30 minutes before carefully pressing them out onto a serving plate.
9. To decorate each pudding: roll out your pre-made icing and find something circular to cut out 9 circles (approx. 5cm in diameter). It could not be easier to place the icing onto of the Puddings and press them down. You can then simply add your pretend holly and chopped glacier cherries and your master pieces are complete!

Tips and Tricks:

  • You can buy holly for cake decorating in many big home wares or budget House2Home type shops. You could also use holly tinsel or cut out your own but it’s much fiddlier.

  • Pre-rolled icing gives your Xmas Puds an instant professional look and couldn’t be easier. Home-made gooey icing is also OK, but a lot messier.

  • If you use 2 different sized circles to cut the icing it makes them look more interesting on the plate.

  • We highly recommend doubling the ingredients and making 2 lots. One for a Xmas party with friends, one for the family. They freeze perfectly, so you can get the second batch (already iced) out of the freezer on Christmas Eve. Defrost at room temperature and then pop on the holly and cherries!

  • If you want to add a slightly more adult flavour, you can add a tablespoon of rum to the recipe at the same time as the treacle.
